But when one of your senses is taken away you must tune into the others,&#8221; said Webb \u2013 <em>NJ Patch<\/em><\/p>\n<p>&nbsp;<\/p>\n<p><em><strong>Chef Burke interviewed by NJ Monthly by KT Harrison<\/strong><\/em><\/p>\n<p>Burke\u2019s new M.O. is designed \u201cto make the evening all about surprise and discovery. It\u2019s really empowering to learn how much your other senses can add to a meal when you can\u2019t see what\u2019s going on.\u201d<\/p>\n<p>The reason, Burke says, is that \u201ctasting without seeing refocuses your taste buds on flavor and texture. You sniff the food, explore its crispness or creaminess. Your hearing is enhanced, too. So is your social radar.
