Jacques Pépin? I met Jaques a couple of times early in my career, but officially, he came to eat my food at the River Cafe in 1988. Florence Fabricant wrote about his visit for the New York Times and Jacques was quoted in it complimenting some of my creations, which was meaningful, if you know, Jaques I’m a fan of his – he’s a great educator, a really good teacher. I watch his TV shows, he’s thorough and his fundamentals and the basics in his books la Technique and la Methode (same publisher as mine and the same cookbook editor)… his books are great, his educational process, his teaching his hospitality, he’s genuinely a beautiful person and always makes time for little people.
I’m so happy that we can be part of the celebration for his 90th birthday and happy to know this living legend ; I can’t believe he’s almost 90 and still going at it! To be able to celebrate his birthday, through my talents, our restaurants and our company we honor the 90/90 mission. HATS OFF to Jaques and thanks for everything he’s done for the industry and for chefs around the world! – Chef David Burke
